It's winter so it's time to get cheesy! Grilled cheese is totally one of my comfort foods and apparently yours as well, today we have 5 awesome variations from the USA, Serbia, Korea/US/Italy (it's an amalgam), India and Germany.

Apple Grilled Cheese Recipe from Justin:
Quarter of Red apple sliced thinly (I used pink ladies)
Sourdough bread
Gouda cheese
Merlot Bellavitano cheese (I've never heard of it before, but it was in the fridge)
Honey (I have this Mike's Hot Honey and it's awesome)
Garlic
Lemon juice

1. I cooked the apples in butter and olive oil with a sprinkle of salt and cayenne
2. Then I put the cheeses, honey, squeeze of lemon, and apples on between the bread
3. Put a couple garlic cloves in the butter/oil (just long enough to flavor the oil, but take them out before they burn)
4. Brown both sides of the bread on high heat
5. Lower the stove, squeeze some lemon juice around the pan and put a lid on the pan (the lemon makes a tangy steam room for the cheese to melt in)
6. Before you eat, rub the garlic cloves on both sides of the bread
7. Nom nom nom

Kimchi Panino:
Ingredients:
Bread of choice (I prefer ciabatta, Focaccia, or thinly sliced sandwich bread)
Kimchi (whatever I can find at my local asian market)
Brown sugar (just a pinch)
White Cheddar Cheese (or swiss is really good if I can't find chessar)
Butter
Garlic powder

Instructions:
1. Put butter and garlic powder on 2 slices of bread
2. Cook kimchi for a few minutes in a pan with a pinch of brown sugar
3. Assemble panino with 2 spices of cheese and kimchi in the middle
4. Use panini press to toast bread and melt cheese until it is thin and crispy (if you don't have a press, you can do this in a pan using another pot/pan on top to press down.
