Today's recipe is "Gratin with Miso".
Miso is one of the soybean foods. It is made from boiled and mashed soybeans mixed with salt and Koji. Koji is a substance such as wheat, barley, rice, or soybean malt that helps the soybeans to ferment. The mixture is left until it ripens. This can take from several months to three years.
[Ingredients (for 2 servings)]
70g Fusilli
1/2 Onion
8 Shrimps
1 Potato
200cc Milk
20g Butter
2 tbsp Flour
1 tbsp Miso*
1/4-1/2 tsp Salt
Pepper
Melty Cheese
*Adjust the amount of miso as you like
[Directions]
Slice onion
Peel potato
Slice potato thinly (5mm width)
Tip! Cut the potato into 5mm slices to cook in a short time. Thicker slices may remain undercooked
Heat and melt butter in a microwave for a minute
Mix flour and butter well
Stir miso into milk
Heat a frying pan and add 1 tbsp of oil
Fry onion, potato and shrimps
When all are coated with the oil, add 300cc water
Add fusilli
Cook on high-medium heat and reduce the liquid by half, for about 8 minutes
Tip! Cook pasta about 1minute shorter than usual
Add milk stirred with miso
When it boils again, reduce heat to low
Add butter mixed with flour
Boil for 1-2 minutes to thicken
Season with salt and pepper
Serve in gratin dishes
Sprinkle plenty of cheese on top
Bake in a 200-250°C oven
Bake until the top has browned
Ready to eat!

Rice and soybeans from their own farms, are grown without any pesticides or fertilizers, to maximize the power of the nature. Homemade Koji (malted rice) is grown by hand over 3 days. Salt is from the sea in Niigata.
