On my last morning in Nicaragua, I dove into the sprawling Oriental Market in Managua—135 bustling city blocks of food, crafts, clothes, and everything in between. With my guide Carlos, I kicked things off with quesillos en bolsa, a rich mix of cheese, onions, and cream eaten straight from the bag, followed by tangy chili-salted mango and a steaming cup of street coffee. We sat down for baho—tender steamed beef with yuca, plantains, and cabbage—before winding through endless stalls of clothes, shoes, party supplies, and street grills. It was a vibrant, chaotic, and unforgettable farewell to Nicaragua.
