Assalamu alaykum! Here's a step-by-step recipe for Haleem from Meraam's Kitchen:
Ingredients:
Green Gram Beans: 1/2 cup
Split Urad Dal: 1/2 cup
Bengal gram lentils: 1/2 cup
Wheat: 1/2 cup
Wheat porridge: 1/2 cup
Split Urad Dal: 1/2 cup
Rice: 1/2 cup
Wash & soak the above ingredients in water for 3 hours.
Boneless mutton: 1 kg
2 big-size onions, thinly sliced
3 tomatoes, pureed
1/2 cup yogurt
Proven Spices (grind the following):
2 Bay leaves
13-14 dried red chilies
1/2 teaspoon black pepper
1/2 teaspoon cumin
1/2 teaspoon coriander
12-15 cloves
7-8 cardamom pods
3 cinnamon sticks
2 tablespoons coriander powder
2 tablespoons cumin powder
2 tablespoons ginger garlic paste
1 tablespoon green chili paste
1 1/2 tablespoons salt
1 1/2 tablespoons red chili powder
1/2 teaspoon black pepper powder
1/2 teaspoon turmeric powder
Instructions:
1. In a pressure cooker, heat 1/2 cup of oil and add the sliced onions and bay leaves. Sauté until the onions change color.
2. Add ginger-garlic paste and cook for a minute. Then add a little amount of water to prevent burning.
3. Add the green chili paste and mix well.
4. Add the boneless mutton and the ground spices. Mix everything together.
5. Add the tomato puree and cook until the water evaporates and the gravy is well cooked.
6. Once the water evaporates, add 1.5 jugs of water to the pressure cooker. Cook for about 45 minutes or until the mutton is tender.
7. Add 1/2 cup of yogurt and cook for a few more minutes on low heat.
8. Meanwhile, take the soaked lentils and cook them in a pressure cooker with 1.5 jugs of water for 45 minutes without pressure.
9. After the lentils are cooked, use an electric beater to make fibers.
10. Pour the lentil batter into the mutton mixture and mix well. Beat with the beater again.
11. Mix everything with a wooden hand masher.
12. Cook for another 15 to 20 minutes, stirring occasionally.
13. Add 1/2 cup of water and cook for an additional 10 minutes.
14. In a separate frying pan, fry slices of onions until golden brown.
15. Serve the Haleem hot, garnished with lemon slices, pieces of ginger, and fried onions. You can also add other ingredients according to your taste for decoration.
