Elegant Wedding Cake Tutorial | Lotus Biscoff, Red Velvet & Stunning Floral Design
Welcome back to Kutiwa Cakes, my lovely cake besties! 💖 In today’s wedding cake decorating tutorial, I’m taking you along for the full journey of creating a 3-tier luxury wedding cake, and let me tell you—it was a mission, but so worth it! Even though I recently had a steroid injection and was meant to take it easy, I couldn’t let my bride down. She booked me months ago, and I knew this cake had to be as special as her big day. So with a semi-healed wrist and a whole lot of determination, I pulled it off! 💪✨
🍰 CAKE FLAVORS & TIERS:
This cake is a flavor lover’s dream and a weight-lifting challenge in one:
Top Tier (6") – Lotus Biscoff sponge layered with creamy white chocolate buttercream and crunchy Biscoff spread 😋
Middle Tier (8") – Another helping of that heavenly Lotus Biscoff combo (because… why not?)
Bottom Tier (10") – Classic red velvet with smooth vanilla buttercream — a timeless favorite ❤️
When I say this cake was HEAVY, I mean it! My poor arms… and shoutout to my mum for stepping in to help with the lifting!
🛠️ TOOLS, TECHNIQUES & STRESS POINTS:
As always, I kept it real and showed every detail, even the bits where things didn’t go to plan. That includes a full-on rant about ganache, which I love and hate in equal measure. It goes on so smooth but then it cracks—and I’ve done all the research, I swear! If you’ve got any anti-crack ganache tips, drop them in the comments because your girl is stressed. 😭
Used ganache instead of buttercream to hold up for the 1.5-hour journey
Added dowels for structural support (14 in the bottom tier, 9 in the middle tier)
Applied a beautiful floral stencil on the middle tier using white ganache
Adorned the cake with real dried flowers for that timeless wedding vibe 🌸
And let’s not forget my brand-new squeeze bottle debut—why did no one tell me how life-changing this is?! 😆 It’s cute, it's practical, and yes, I may have tried naming it on camera.
🚛 DELIVERY DRAMA & VENUE VIBES:
This was the longest journey we’ve ever taken to deliver a cake—an hour and a half—and I was terrified of cracks the whole way there.
