ingredients
Syrup
290 ml water (just use half the amount, should be enough)
150 gram granulated sugar (just use half)
240 mil Limoncello
1 and a half lemon (juice)
Tiramisu
48 lady fingers
400 grams Lemon curd (only use 200g, its very sweet otherwise)
600 gram Mascapone cheese
1.5 lemon (juice)
80 ml Limoncello
16 fl double cream
60 grams granulated sugar (i found it quite sweet so you can leave out the sugar if you want)
Topping
8 fl double cream
2 - 3 tbs icing sugar
1 whole lemon zest
grated white chocolate (optional)
method
pour the water in a saucpan and add the sugar, stir on a gentle heat until the sugar is desolved, take off the heat and then add the limoncello and lemon juice, stir and set aside to cool then pour in a bowl to use when dipping in the lady fingers.
loghtly beat the mascapone to loosen, then add the lemon curd, stir to mix in, tjen add the lemon juice and lemoncello. stir in the sugar (if using)
in a seperate bowl, whisk the cream until soft peak, gently stir in the mascapone mix until all combined.
place lady finger in bowl of syrup, coating back and front (no more that 2 seconds) place evenly in the large dish, when all bottom is covered, pour in mix ( if only doing 2 levels, pour in half, if 3 levels, pour in one third) level the mascapone mix and repeat with the lady fingers and then the mascapone mix.
place in fridge for a minimum of 4 hrs (preferable over night)
after given time, pour the cream in a bowl, whisk lightly and then add the icing sugar and lemon juice. take the Tiramisu out of the fridge and with a piping bag, decorate the top of Tiramisu ( you can also just spread the topping over evenly) decorate with grated rind ofba lemon and a little white chocolate.
