🍓𝙇𝙞𝙠𝙚, 𝘾𝙤𝙢𝙢𝙚𝙣𝙩, 𝙎𝙝𝙖𝙧𝙚, 𝙖𝙣𝙙 𝙨𝙪𝙗𝙨𝙘𝙧𝙞𝙗𝙚. 𝙨𝙪𝙗𝙨𝙘𝙧𝙞𝙗𝙚 𝙞𝙛 𝙮𝙤𝙪 𝙬𝙖𝙣𝙩 𝙩𝙤 𝙜𝙧𝙤𝙬 𝙢𝙤𝙧𝙚 𝙤𝙣 𝙢𝙮 𝙮𝙤𝙪𝙩𝙪𝙗𝙚 𝙘𝙝𝙖𝙣𝙣𝙚𝙡!🍓
NOTE:
This kashmiri chai kehwa can stored in the fridge for 7 days
Ingredients:
Water 2 cups
Cold water 5 cups
Kashmiri tea leaves 2 tbsp
Baking soda ¼ tsp
Green cardamom 10–11
Cinnamon stick 1 small
Cloves 3–4
Star anise 1-2 (optional)
Salt ½ tsp or 1 pinch
Milk 3 cups
Pistachios (sliced) 2 tbsp
Almonds (sliced) 1 tbsp
Sugar as needed
Steps:
1. In a saucepan, add 2 cups water, Kashmiri tea leaves, baking soda, salt, and all spices.
2. Bring to a boil and cook on medium heat for 2 minutes and whisk it.
3. Add 2 cups chilled water, bring to a boil, and cook until reduced to ¼ cup.
4. Add the remaining 3 cups chilled water, boil again, and cook until reduced to about 2 cups.
5. Whisk the tea vigorously for 2–3 minutes until the color deepens.
6. Add ½ cup ice-cold water and whisk again for 1 minute to activate the pink color.
7. Strain the tea into another pot — this is your kehwa base.
8. In a separate pan, boil 3 cups milk, then add the prepared kehwa base.
9. Cook on low flame for 2–3 minutes, stirring continuously.
10. Add pistachios, almonds, and sugar.
11. Serve hot and garnish with extra pistachios
