I found this hefty creamy spinach chicken at the grocery store with a steep discount (it was headed for the trash) so I decided to add it to my cart and turn it into a rich, flavorful dinner. Using a few fresh ingredients as well as some staples from the pantry and freezer- canned tomatoes, chickpeas, coconut cream and some extra frozen spinach- I whipped up this warm, creamy, tangy chicken dinner inspired by one of my favorite curries, Chana Palak.
