Dough Ingredients:
180 ml warm milk
7 g instant yeast
25 g white sugar
25 g brown sugar
1 whole egg + 1 egg yolk
57 g unsalted melted butter
360 g bread flour
4 g salt
½ teaspoon vanilla

85 g unsalted softened butter
110 g brown sugar
2 teaspoons cinnamon
Topping (Glaze) Ingredients:
Milk at room temperature

4 g vanilla (powder or extract)

How to Make the Dough:
1. Warm 180 ml of milk over low heat until it reaches a temperature where you can comfortably hold your little finger in it for about 7 seconds.
If the milk is too hot, it will kill the yeast; if it’s not warm enough, the yeast won’t activate.
2. Transfer the warm milk to a bowl, add 25 g white sugar and 7 g dry yeast, and let it sit for 10 minutes to activate.
Signs of activation: a foamy brown layer full of bubbles and the aroma of bread.
3. Meanwhile, mix 360 g bread flour with 25 g brown sugar and 4 g salt.
4. Once the yeast is activated, add 57 g melted butter, the egg, yolk, ½ teaspoon vanilla, and 1 teaspoon espresso powder (optional). Stir in three-quarters of the flour mixture, mixing with a spoon.
5. Add the remaining flour and continue mixing until the dough loses excess moisture. Transfer to a floured surface and knead for 8–10 minutes until smooth and elastic.
