Water Buffalo In Florida and an Egyptian Cheese

Join my husband Stephen and I as we go on an adventure (ok, small trip) to collect milk for today’s cheese. I’m trying out an Egyptian cheese called Roumy which is made with a combination of water buffalo and cow’s milk. It is similar to Romano or kefalotyri cheeses and also aged for a year or two. Although this seems like a new project for me I have actually been thinking about making cheese for about 10 years now. I just didn’t know how to get the milk in a practical manner. Thanks to my dear friend Eva Iskander I was able to source the cow’s milk and today I found a source for water buffalo milk in Plant City. These are river water buffalo which I think are the same type they have in Egypt. Believe it or not, Egyptians from my parents’ generation were more accustomed to drinking water buffalo milk than cow’s milk.

There is a somewhat insulting Egyptian phrase used to imply that someone is backwards which translates to “you just came from behind a water buffalo.” It’s my mission to make that a cool thing 😄
