✨INGREDIENTS✨

#1 Candied Almonds

200g raw almonds (7,05oz) = (1 ⅓ cup + 1 tbsp)
125g sugar (⅔ cup)
80ml water (⅓ cup)
a generous pinch of salt
1/2 tbsp cinnamon
1 tsp vanilla

→ yields around 4 servings

#2 Vegan Handbrot

2 tsp sugar
½ cup warm water (125ml)
1 tbsp olive oil
2 tsp dry active yeast

250g all purpose flour* (2 cups + 1 tbsp)
1 tsp salt

3/4 block of smoked tofu (150g)
1 red onion
oil for the pan

4-5 handfuls of vegan pizza cheese
or make some of my vegan cheese sauce**


*you can also sub spelt flour, but then make sure to add 1-2 tbsp more water
** Melt 1 tbsp of vegan butter on medium high heat. Add 1 tbsp of cornstarch and mix that in. Pour in ¾ cup of non dairy milk (180ml). Bring it up to a quick boil, then turn the heat to medium, stirring frequently until it thickens up. Then add 1-2 handfuls of vegan pizza cheese, a pinch of turmeric, a generous pinch of salt (or to taste) and 1 tsp of white wine vinegar. Continue mixing until you have reached your desired consistency. This recipe can be helpful if you don’t have that much vegan cheese at home, or the vegan cheese you have is not that great or just don’t wanna use up all your vegan cheese at once.

→ yields 4 little breads

#3 Kinderpunsch

1 cup apple juice (250ml)
½ cup cherry juice (125ml)
⅓ cup grape juice (80ml)
1 squeeze of fresh lemon juice
the peel of half of an organic orange (or add a splash of orange juice)
1 bag of cinnamon-y christmassy tea

→ serves 2 ; amount can easily be doubled or tripled of course

#4 Vegan Mutzen aka vegan Donut Holes

1 1/2 tbsp cold vegan butter = 23g
1/2 cup non dairy milk (125ml)
1 tbsp lemon juice
1 tsp vanilla
4 ½ tbsp sugar
2 tsp dried active yeast

250g spelt flour + a bit more for the surface (2 cups + 2 tsp)
1/2 tsp salt

also ½ litre or 2 cups of frying oil

PLEASE be careful when adding the bites to the oil or taking them out again - hot oil splashes are painful.

→ yields around 30 little bites

#5 Vegan Tofu Sausage Buns

1 clove of garlic
1 small onion
Oil for the pan
1 block of firm plain tofu (200g = 7oz)
1⁄2 cup quick oats (45g)
1 tbsp yellow mustard
1 tbsp BBQ sauce
1/2 tsp smoked paprika
1 tbsp white wine vinegar
2 tbsp cornstarch
a handful of fresh or frozen herbs
salt, pepper to taste

1-2 tbsp olive oil for frying

also 8 - 10 small rice paper sheets
2 onions, cut into rings and fried in ½ tbsp vegan butter and ½ tbsp of oil and seasoned to taste
mustard, ketchup

yields 8 - 10 tofu sausages

#6 Vegan Crepes

180g spelt or all purpose flour ( 1 ½ cup OR 6,3 oz)
2 tbsp corn starch
1 tsp baking powder
1/4 tsp salt
2 ½ tbsp raw sugar
1/2 tsp vanilla
1 1/2 cups non dairy milk (375ml)
1 tsp apple cider vinegar

coconut oil (for greasing the pan every once in a while)

also fillings/toppings of choice

depending on how big you make them this yields 6 - 10 crepes
