As mentioned in the video, here's a simple recipe for making a chocolate ganache:
Using white chocolate: Add approximately 350g (12.3oz) of white chocolate to 150ml (5.07 fl oz) of warm heavy cream. Simmer the cream by itself for 5-10 minutes until most of the moisture has evaporated and the cream is at a thicker consistency. Allow the cream to cool for around 10 minutes and then add the finely chopped chocolate and stir until melted and well combined. Allow to cool. The ganache will become more solid as it cools, so if you plan to add fruit jams to it, do so while the consistency is still soft.
Using dark chocolate: Following the same steps as above, use approximately 300g (10.5oz) of dark chocolate (dairy-free for vegans) and around 200ml (6.76 fl oz) of cream (or coconut cream for a vegan variety).
*Please note that these amounts are approximate and may need to be adjusted depending on the quality of the chocolate and cream that you use.
