Recipe (serves up to 10):
2lbs green beans (or 4 cans)
3 cups cream of mushroom soup (or 2 cans) (homemade recipe below)
1/2 cup sliced almonds, toasted
1 1/2lbs mozzarella, cubed
1 stick of butter, cubed
1lb of shallots, sliced & fried (boxed fried onions work great)
Cream of mushroom soup recipe:
1lb cremini mushrooms, sliced
1lb shiitake mushrooms, sliced
1/2 yellow onion, diced
2 shallots, diced
1/2 stick of butter
2 tsp olive oil
6 garlic cloves, chopped
3-4 sprigs of thyme
1/2 cup of AP flour
3/4 cup of dry white wine
1 1/2 cups of veg broth or mushroom stock
Salt & pepper, to taste
1 cup of heavy cream
1 tbsp white miso
Steps:
1. Make cream of mushroom soup ahead of time, giving it time to thicken
2. Clean green beans, then blanch in heavily salted boiling water for 5-6 minutes
3. Cube mozzarella and butter
4. Toast almonds
5. Mix ingredients together, transfer to a casserole dish
6. Bake at 350°F for 45 minutes
7. While baking, slice shallots and heat canola oil up to 350°F
8. Fry shallots in small batches, dry on a paper towel and salt immediately
9. Remove casserole dish from oven, sprinkle with fried shallots, then back into the oven for 15 minutes to finish
