Bacon Potato Salad Grilled On The Weber Kettle - With Sriracha Vinaigrette

Описание: Some time ago I made a grilled potato salad, but with this version I wanted to kick it up a notch by cooking it directly over coals and spicing it up with a Sriracha vinaigrette dressing. The pound of bacon mixed in didn't hurt, either.

Grilled Bacon Potato Salad

1 pound Bacon chopped
2 lbs Red Potatoes cut into pieces and par cooked until knife tender
1/2 Red Onion thinly sliced
1/4 cup Chopped Parsley

Fry bacon to desired doneness. Grill potatoes until fully cooked and browned. Combine all ingredients in a bowl and coat with Sriracha Vinaigrette. Toss, serve, and enjoy!

Sriracha Vinaigrette

2 TBSP Mayonnaise
1 TBSP Minced Garlic
1/4 tsp Salt
1/4 tsp Pepper
2 TBSP Apple Cider Vinegar
2 TBSP Vegetable Oil
Squirt of Sriracha Sauce

Combine Mayonnaise, Garlic, Salt, and Pepper in a small bowl and mix then mash with the back of a spoon. Transfer to a small jar and add remaining ingredients. Shake to mix well and refrigerate if using later.
