Would you believe me if I told you no middle eastern would make hummus by measuring, it’s really simpler than you think, a little bit of this and a little of that and you can make it to your liking. Lets make fattet hummus in a pita shell
Ingredients:
2-2 1/2 cups homemade garbanzo beans aka hummus (substitute 2 cans garbanzo beans)
3 cups water
Tahini (less than a 1/4 cup)
1/2 tsp salt, 1/2 tsp citric acid (to start with)
8 ounce ground beef
Cinnamon, black pepper, paprika, salt and ground cardamom (optional) to your taste
Pine nuts
Olive oil
Pita bread
Oil for frying
Toppings: Parsley, paprika, sumac, reserved whole garbanzo
-I like to fry my nuts first so I can use the oil for frying the meat
-in the same pan add the meat, break it up add the spices stir well to brown, cover and let the meat cook in its juices
-in a deep pan heat the frying oil to warm, drop the pita gently and cook on medium heat bathing the whole pita in hot oil, it will start expanding to form a ball! Be patient once browned from the bottom flip and let get golden on the other side. Allow to cool on a paper towel
-make the hummus by blending the ingredients and stopping and tasting. For fatteh is should be runnier than your typical hummus
-break a small hole in the pita and assemble as you see in the video
Note: please soak your own hummus and prepare it from scratch, you will thank me later! Much better flavor, no preservative and cost effective
