Strawberry Lemon Bundt Cake:
1 c. sugar
1 T. lemon zest
1 1/2 c. flour
1/4 tsp. salt
2 tsp. baking powder
1 c. (vanilla) Greek yogurt
1/2 tsp. vanilla
3 large eggs
1 T. lemon juice
1/2 c. vegetable oil
1 c. diced strawberries
1/2 T. flour
Rub together lemon zest and sugar. Mix together with flour, salt, and baking powder. In another bowl, beat eggs, greek yogurt,vanilla, lemon juice, and oil. Stir until combined. Gently combine wet ingredients with dry. Coat strawberries in 1/2 T. flour and fold into batter. Divide into greased mini bundt pans. Bake at 350° for approximately 30 minutes. Remove and let stand for 5 minutes. Tap out onto a tray to cool completely. Top with glaze.

Glaze:
zest from 1 lemon
1 c. powedered sugar
1 1/2 tbsp. lemon juice
