Zimbabwe is a wonderful country with unique flavours. The culture influences the different types of cooking methods, aromas, flavours and textures. After experimenting with different flavours I have come up with the recipe which l have been making for years and I think it is one of the best and a must-try zondo recipe. It is a perfect dinner for you or your family to enjoy the goodness that Zimbabwe has to offer.
Serves 3-6 people
Ingredients:
1,5 kg Zondo (Cow heels)
2 cups samp (Manhuchu)
Fresh Ginger
1 Pinch saffron
2 King Onions
4 garlic cloves
6 Cloves
6 Cardamom
1 Cinnamon stick
2 tomatoes
2 tablespoons tomato paste
800ml red wine
rosemary
1 tablespoon paprika
1 tablespoon Tumeric
1 tablespoon cumin seed
1 tablespoon ground cumin
sunflower oil/ vegetable oil
5 tablespoons salt
1,5 litres water
