Lamination has never been easier! Professional kitchen recipes can be easily made at home. This time I am sharing "Black forest like" danish pastry. Chocolate danish are not that common so decided to run tests and share this with you. However, bare in mind that the pastry will be a bit more dry than the the 'regular' white flour danish, but you can put Creme Patissiere, chocolate ganache, dulce de leche, whipped cream! Recipe:
Plain or All purpose flour - 230g
Cocoa powder - 22g
H2O/Milk - 105g
Egg (roughly one egg) 45g
Salt - 5g
Brown sugar/white sugar - 35g
Fresh Yeast - 11g
Butter - 45g
Lamination butter: 125g
Curd cream recipe:
Curd - 75g
Cream cheese - 50g
Caster sugar - 20g
Egg yolk - 1
Vanilla
