Preparation Method
Ingredients:
• For Marination: 500g Chicken, 1 cup Curd, 1/2 tbsp Turmeric powder, 1 tbsp Red chili powder, 1 tbsp Salt, 1 tbsp Coriander powder, 1 tbsp Ginger-garlic paste, sliced Green Chilies, 1 cup sliced Onions, fresh Coriander leaves, Fried onions, and 2 spoons Lemon juice.
• For the Rice: 500g Basmati Rice (soaked), Whole spices (Cinnamon, Cloves, Cardamom, Bay leaf), 1 tbsp Salt, and 2 spoons Vinegar (for white, non-sticky rice).
• For Cooking: 4 tbsp Oil, 1 tbsp Ghee, 1 tbsp Cumin seeds (Jeera), and 1 tbsp Biryani Masala.
Step-by-Step Instructions:
1. Marination: In a bowl, mix the chicken with curd, turmeric, chili powder, salt, coriander powder, ginger-garlic paste, green chilies, onions, coriander leaves, fried onions, and lemon juice. Let it marinate for at least 30-60 minutes.
2. Cooking Rice: Boil water with cinnamon, cloves, cardamom, bay leaf, salt, and vinegar. Add the soaked Basmati rice and cook until it is 70-80% done. Drain the water and set the rice aside.
3. Cooking the Chicken: In a large pan, heat oil and ghee. Add cumin seeds. Pour in the marinated chicken and cook on medium flame. Once the chicken starts releasing oil, add biryani masala and cook until the chicken is tender.
4. Layering: Take some chicken out or spread it evenly. Create layers by adding the cooked rice over the chicken. Top with fried onions, coriander leaves, and another layer of chicken/rice if needed.
5. The Dum: Drizzle food color (or saffron water) and a spoon of ghee on top. Cover with a tight lid and cook on very low heat (Dum) for 10-15 minutes.
6. Serve: Gently mix and serve hot with raita!
