My Chicken Curry Recipe, serves 4
4 chicken fillets
One large white onion
I cube of frozen garlic and ginger (you can buy this in the freezer section of supermarkets in the U.K) or use a tablespoon of ginger and garlic paste from a jar.
2 cloves fresh garlic
1 teaspoon of Garam Masala (preferably blended from a family recipe - we have a friend who has hers blended in Goa and it's amazing)
1 teaspoon of turmeric
Add a little chilli to taste
1 Oxo cube crumbled (or any beef stock cube) - my secret ingredient :-)
I tin of plum tomatoes
Swish out the tomato tin and add 1 tin of water
Tiny pinch of salt (not too much as the stock cube is already salty)
A grinding of fresh black pepper
Small bunch of coriander (cilantro)

Fry the cubed chicken in a little oil, add the chopped onion (I leave mine quite large)
Fry for 5 mins until softened, then add the cube of frozen ginger/garlic paste.
Add the fresh garlic along with the garam masala, turmeric, salt and pepper. Stir and add the tinned tomatoes, crumbled oxo cube and tin of water. Stir for a few mins and add a lid. Cook in the oven for 30-40 mins on a medium heat (170 degrees ish) until the chicken is tender.
Chop coriander (cilantro) and stir in to serve. Serve with basmati rice.
