🥣 INGREDIENTS — SPINACH DAL
Lentils
¾ cup split peas, soaked with a pinch of baking soda (or moong dal / toor dal)
¾ cup red lentils, rinsed and drained
Vegetables + aromatics
½ lb spinach, rinsed, dried & shredded
1 medium yellow onion, thinly sliced (1 cup)
7 garlic cloves, finely grated (2 tbsp)
1 tomato, chopped (1 cup)
2 tsp chopped green chili (optional)
1 ½ tsp freshly grated ginger
Spices
2 tsp cumin seeds
4 dried red chilies
1 tsp chili powder
1 tsp turmeric
2 tsp ground coriander
1 tsp garam masala
2 bay leaves
4 whole allspice berries (optional but delicious!)
Liquids
4 cups water
4 tbsp olive oil or avocado oil
2 tsp lemon juice
1 tsp salt (adjust to taste)
Garnish
Crispy fried onions (from the sauté step)
2 tbsp chopped cilantro
HOW TO MAKE SPINACH DAL
1. Prepare the lentils
Soak split peas with a pinch of baking soda.
Rinse red lentils and drain. Set aside.
2. Fry the onions (save some for garnish!)
Heat oil in a large pot.
Add sliced onions and cook until golden and crispy.
Remove 2–3 spoonfuls for topping later.
3. Build the flavor base
To the pot, add:
cumin seeds
garlic
dried red chilies
Sauté until fragrant.
Stir in chili powder, turmeric, coriander, garam masala, and ginger.
4. Add tomatoes + spinach
Mix in chopped tomato, green chili, and shredded spinach.
Cook until softened.
5. Add lentils + water
Pour in:
soaked split peas
red lentils
4 cups water
salt
Bring to a boil, then simmer 20–25 minutes until creamy.
6. Finish + garnish
Stir in lemon juice, fresh cilantro, and top with crispy onions.
Serve with rice, naan, roti, or enjoy as a nourishing bowl on its own.
