Recipe:
Soparnik by Makronova Cooking School in Zagreb, Croatia
Ingredients
For the dough (for one large, shallow baking pan):
4 Cups All Purpose Flour
1 tsp salt
1 tsp apple cider vinegar
2 Tbsp olive oil
about 200 ml warm water (add a little more if needed)
For the filling:
1 Large Bunch of Swiss chard (only the green leaves)
2 Spring onions (green parts only)
1 Large bunch fresh parsley
Olive oil
a pinch of salt
For brushing before serving:
Olive oil
1–2 cloves garlic, finely chopped
Preparation:
1. Prepare the chard
Remove the white stalks and main veins from the chard leaves.
Wash thoroughly, then spread out on a clean towel or kitchen cloth and let dry completely.
2. Make the dough
In a bowl, combine the flour and salt. Stir in the vinegar and olive oil.
Gradually add the warm water, a little at a time, mixing by hand so you can feel the consistency.
Knead into a compact, slightly firm dough that doesn’t stick to your hands. Be careful not to over-knead, or the dough will become tough.
Shape into a ball and set aside while you prepare the filling.
3. Prepare the filling
Slice the dried chard into thin strips. Finely chop the parsley and the green parts of the spring onions.
In a bowl, toss the chard, parsley, and spring onions with a drizzle of olive oil and a pinch of salt. Mix well.
4. Assemble
Divide the dough ball in half with a knife.
On a lightly floured surface, roll out one half into a circle or square large enough to line your oiled, floured shallow pan. Transfer it to the pan.
Spread the chard filling evenly over the dough.
Roll out the second half of the dough to the same size and place it on top of the filling.
Fold the edges of the top layer down toward the bottom layer, sealing the filling completely.
Prick the top layer in several places with a fork.
5. Bake
Preheat your oven to 200 °C (390 °F).
Bake for about 20 minutes (up to 25 minutes, depending on your oven) until golden brown.
6. Finish and serve
As soon as it comes out of the oven, brush the top with olive oil mixed with the finely chopped garlic.
Slice and serve directly on a wooden board, as is traditional. Enjoy!
