The property, Red Cow Farm, sits on 6 acres (2.4ha) of formal gardens and informal woodlands in the Southern Highlands of NSW, so there’s always lots to do.

The garden was laid out by Ali and his partner Wayne Morrissey – he says they are the “slaves and creators”. They moved down from Sydney in the early 1990s, wanting to garden in a cool-climate area, after being inspired by visiting gardens in Europe in the 1980s.

They looked for a suitable place for five years before they stumbled upon a “pretty sad-looking cottage” by the side of the road. “It had enough land for us but as far as the garden, there was nothing here,” Ali says.

They have since planted trees, built walls, pergolas and other infrastructure, and “about 20 garden rooms”.
