Recipe:
Sandhill Plum Jelly
Makes (9) half pints (8oz jars)
At least 2 gallon ice cream buckets of plums (makes 5 1/2 cups juice—-just enough for one batch)
1 box Pectin (dry powder, original)
6 1/2 cups sugar
5 1/2 cups of juice
1/2 teaspoon of butter
Steps:
De-stem and rinse plums
Put plums in stock pot
Boil on medium until plums are soft
Strain plums to separate pulp from juice (first with strainer and then a tea towel folded over)
Heat Juice, Butter, and Pectin
Rolling boil 1 minute
Add 6 1/2 cups sugar slowly and mix thoroughly
Rolling boil 1 minute
Plate test jelly for no sag (2 min in fridge)
Take jelly off of burner
Carefully skim top to remove foam
Ladle into jars
Process for 10 minutes in water bath canner
