(All of these measurements are just going to approximations. Deal with it. The base of this method came from this video I watched where Carla Lalli Music made a pot of beans. She also did a video on Pasta e Fagioli that I also used as inspiration. Take about 1 lb of dry beans (I used Cannellini beans), rinse them, and soak them for at least 12 hours. Use a lot of water, and don't throw away that liquid. It'll become the broth.
The next day, make a sofrito with 1 head of Garlic, 1 Leek & 2 big Carrots. I know Carrot/Onion/Celery is the classic combination. I saw Carla Lalli Music do it this way, and I like it better.
Sweat that for 15 minutes. Then add the Beans and all their liquid. At this point, I added a leftover Ham bone that I had from Easter Dinner. I'm not always going to have a Ham Bone lying around, so I'd recommend doing what Carla Lalli Music did in the Bean video linked above & add a bunch of fat. Next time I make this, I'm reaching for Olive Oil. And I'm not going to be shy with it. I'll probably add at least a cup.
It took my beans 3 hours to cook on a low simmer. Add more water as needed. I wanted my soup brothy, so I ended up adding a lot of extra water.
I added Kale at the end. I like to add greens at flameout (as homebrewers would call it). Just turn off the heat, add the greens, and let the residual heat cook them.
Serve over pasta. No, don't add dry the pasta into the soup. It'll turn it gummy. Then the pasta will be mush the next day. Don't do it. Cook the pasta separate.
I used Orecchiette because it was all that my grocery store had, and I'm so glad I did. It's now my favorite pasta shape.
