VEGAN GERMAN APPLE CAKE
RECIPE
(FOR THE CAKE)
3 apples, peeled and cut into slices
½ cup non-dairy butter
½ cup granulated sugar
½ cup applesauce
2 tbsp non-dairy milk
1 ½ cups plain flour
2 ½ tsp baking powder
(TOPPING)
¼ cup brown sugar
½ tsp cinnamon
½ tsp ground ginger
METHOD
Preheat oven to 180°C degrees. Lightly grease a 9” spring form pan.
To make the cake, cook the apples in a little bit of water on the stove or in microwave until they’re just a little soft but not mushy. If using microwave, no longer than 1 & 1/2 minutes.) Set aside
With an electric hand mixer or by hand using a wooden spoon, cream together the butter, and sugar. Add the applesauce and non dairy milk. Finally, add the flour and baking powder, and stir until just combined.
Add the batter to the prepared pan, and arrange the apple slices in a circle on top of the cake.
To make the topping, mix together the brown sugar, cinnamon, and ginger, and sprinkle over the apples, covering the top of the cake.
Bake for 30-40 minutes, or until a toothpick inserted into the middle comes out clean. Let cool for 15 minutes before unmolding from the cake pan.
