A classic French dish featuring tender chicken pieces simmered with morel mushrooms in a rich, creamy sauce, often served with rice or potatoes.
Ingredients
4 skinless chicken breasts
30g dried morel mushrooms
1 shallot, finely minced
2 tablespoons unsalted butter
1/2 cup dry white wine
1/2 cup heavy cream
1 teaspoon dried thyme
Salt and freshly ground black pepper
Instructions
1. Soak the dried morel mushrooms in warm water for 30 minutes, then drain and set aside.
In a large skillet, melt the butter over medium heat. 2. Add the chicken breasts (cut into large pieces) and cook until lightly browned on both sides. Remove and set aside.
3. In the same skillet, add the minced shallot and sauté until translucent.
4. Add the soaked morel mushrooms and cook for a few minutes.
5. Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Let it simmer for a few minutes to reduce slightly.
6. Return the chicken to the skillet, add the dried thyme, and season with salt and pepper.
7. Pour in the heavy cream, stirring to combine. Cover and let it simmer until the chicken is cooked through and the sauce has thickened slightly.
8. Serve hot, garnished with fresh herbs if desired.
