Описание: Today I bring you a Mughalai recipe, this recipe holds a special place in Mughal court and its called mutton qorma. It's said to be the 1st mutton qorma was served to Shahjahan and his guest on the inauguration of Taj Mahal.
let's go in depth of this word 'Qorma'. Qorma word is derived from Urdu word called 'Kormah' which now a days is known as braising, its a process in which heat,time and moisture is used to to break down the connecting tissues of muscle fiber which is collectively called meat.So the invention of braising technique was established 400 years ago and till now this technique is used by international master chief.
