1/4 cup cold water
1 cup boiling water

4 egg whites
Custard:
2 cups milk
1/2 cup sugar
4 egg yolks
1 tsp vanilla
Instructions:
Snow Pudding:
1. Sprinkle gelatin over cold water in a bowl and let it stand for 15 minutes.
2. Add boiling water, sugar, and lemon juice. Stir until everything's mixed.
3. Chill in the fridge until it thickens, like unbeaten egg whites (1-2 hours).
4. Beat egg whites in a serving bowl until stiff peaks form.
5. Gradually add the gelatin mixture to egg whites, beating until it's fluffy.
6. Chill in the fridge until set, about 3 hours.
Custard:
1. Beat egg yolks and sugar together.
2. Add a splash of milk to thin, beat well, then pour in the rest of the milk.
3. Cook using a double boiler until thickened.
4. Cool, then stir in vanilla.
5. Chill and serve it over your snow pudding.
Tip: Ensure your gelatin is perfectly chilled before whipping for the fluffiest texture.
