3 types of chutney(red, green and Imli chutney)|| دری ډوله چکنی( سره، شنه او املی چکنی)
Red chutney:
Ingredients:
4 bell pepper
4 to 5 red hot peppers
5 garlic cloves
1/2 cup white vinegar
3 tbls sugar
1/2 tsp salt
Instructions:
Add the peppers, garlic and vinegar to a blender
grind to a smooth paste
transfer all into a pot
add the sugar
on medium heat boil for 20 minutes until the liquid reduces a bit and come together
add the salt and cook for some more minutes
turn the heat off and let cool
Once cooled store in an airtight container in the refrigerate
Imli chutney
Ingredients:
250g Tamarind
2 cups Water
1/2 tsp salt
1/2 tsp cumin powder
1/2 tsp chili flakes
1/2 tsp red chili powder
A small piece of jaggery (50g)
2 tblsp white vinegar
Instructions:
soak tamarind in warm water for 20–30 minutes Mash and strain to remove seeds/fibers
Pour the strained pulp into a bowl add the salt, cumin powder, chili flakes, red chili powder and stir well
transfer the pulp to a pan
add jaggery and cook on medium flame until it dissolves
Add the white vinegar mix well and simmer for 15 to 20 minutes
Cool and store in an airtight jar in the fridge
Coriander and mint chutney:
Ingredients:
A bunch of fresh coriander leaves
1/2 cup mint
5 garlic cloves
5 to 6 or to taste green hot pepper
1 bell pepper
1 small tomato
1/2 lemon
2 tblsp white vinegar
To taste salt
Instructions:
Add all ingredients to a blender
Grind to a smooth paste, adding a little water if needed
store in a airtight jar for about a week or more
