Banana Flapjacks | Roving Haggis

In a change from our weekly family banana bread, I thought I would make banana flapjacks. The addition of the banana makes them softer and squishier than a traditional Scottish flapjack, but they are so delicious and just perfect with a morning coffee.

Makes 20 squares (8 x 10” or 20 x 26cm tin)
2 ripe bananas
300g porridge oats
100g soft brown sugar
150g golden syrup
150g butter
1 tbsp cinnamon
Good pinch of flakey salt (I used smoked salt)
60g dark chocolate

Melt butter, syrup and sugar in a pan. Add mashed banana, oats, cinnamon and salt and mix till well combined. Press gently into a lined tin and bake in oven at 180c fan forced for 20 minutes. You can bake a little longer of you prefer it crispier.
Leave to cool and cut into squares, then drizzle with dark chocolate.
