Vietnamese Pate Chaud Recipe (puff pastry with meat filling)

A popular party food, Pate chaud is a French Vietnamese family favorite in my house. Takes about 1hr to make, but you can make the filling 1day ahead to save time the day of your party. You will need:
1 puff pastry package/filo dough already buttered prepackaged ( $4)
1 small onion diced ( $0.20)
1/3 package of dried black fungus mushroom rehyrated and cut into 1/2 inch pieces or any mushroom you prefer( $1.50 at an Asian market)
1/2lb ground pork (or beef or turkey) ($1)
1tbsp liver pate(optional)
1 handful of dried vermicelli noodles rehydrated and cut into 1/2 inch pieces($0.30)
5-7 tbsp oyster sauce ($2/bottle)
2 tbsp sugar to taste($.01)
Salt and pepper to taste
Combine all ingredients aside from the filo dough in a large skillet until meat is browned and filling is well cooked (20 minutes) and set aside to cool.
Open pastry into its 2 premise sheets. With a knife, make 9 squares per sheet of pastry. Place 1 tsp of cooled meat filling into pastry squares and fold in half to make a triangle shape. Seal the edges of the pastry with a fork and coat with egg wash or beaten egg to make the tops of the pastry golden brown during baking.
