Frisee is a type of curly leaf endive that is commonly used in European influenced kitchens. It's bitter leafs add a nice contrast to rich dishes. I especially like pairing frisse with charcuterie. However, the large outer leaves of the frisee are overly bitter and are usually removed and discarded before serving.
