Hi everybody and welcome to my kitchen!
It is Paddy's weekend so of course having lived in Ireland pretty much my entire life, I want to make sure that I take this opportunity to celebrate Ireland and Irish culture, particularly Irish cuisine.
A Sunday roast, us something most if not all Irish families enjoy, and there are a million and one way to have them, today I'm going to keep it simple as I start a series dedicated to Sunday roasts.
I will start with one of my favourites a Beef Roast

Ingredients:
Roast Beef
Salt & Pepper
Dried Rosemary
1 Onion

Potato Champ
4 medium floury Potatoes
1 cup Green Onions
50-75ml Milk
55g Butter
Salt & Black Pepper

Gravy
Roast juices
2 Tbsp Corn-starch
4 Tbsp Water
Beef stock (or Bisto)
Salt & Pepper

Turnip
Butter
