I think banana bread is the most eaten thing in our house, along with peanut butter ,so I adapt it every week to a new flavour (no joke okay maybe every other week).
I also try to keep it as healthy and nutritious as possible, its also a great way to sneak in fibre, vitamins and protein without realising.
This is my favorite recipe, well nearly my Grandma Brenda was actually the Queen of banana bread making.
FREEZE IN SLICES-then toast in pieces when fancy a piece you will never eat banana bread the same way again it is life changing!
Ingredients:
12tbsp /75g melted coconut oil or olive oil or vegetable oil.
6-8tbsp / 160g honey depending how ripe your bananas are.
2 eggs
2-3 ripe bananas (I like to add last so chunky )
7 tbsp / 60g coconut milk/milk/soya etc. or can use yoghurt also!
1 tsp bicarbonate soda
A tiny pinch of salt
1 tsp cinnamon, or mixed spice.
1tsp vanilla if want (I don’t usually add)
220g whole wheat flour or plain flour or gluten free plain flour
Flavour options:
handful of raisins/nuts or both
couple tbsp's of mixed seeds
2tbsp of peanut butter
dark chocolate
orange zest works well too
Handful of dried dates works well too (makes it like sticky toffee pudding if you soak them first-just make sure to strain them after soaking)
1 tsp ginger
1 tsp vanilla/almond extract if want.
Can add them all in, or mix a few of them or none at all.
If you want super chocolatey: replace 2tbsp of flour with cocoa powder.
