You simply wash, dry, and optionally slice the okra, then freeze it individually on a baking sheet before transferring it to freezer bags or containers. While blanching improves color and texture, it's not mandatory, and unblanched okra is still suitable for soups and stews.
1. Prepare the Okra:
Wash and dry the okra pods thoroughly. You can then slice them into desired lengths or leave them whole.
2. Flash Freeze:
Spread the okra in a single layer on a parchment-lined baking sheet. Freeze for 1-2 hours, or until the pieces are solid. This step prevents them from sticking together in the freezer bag.
3. Package and Freeze:
Transfer the frozen okra to freezer-safe bags or containers. Remove as much air as possible from the bags before sealing.
4. Storage:
Store the frozen okra in the freezer until ready to use. It can last for several months.
Considerations:
Texture and Color:
Blanching helps deactivate enzymes that can lead to a mushy or slimy texture and a khaki color when cooked. If these are concerns, consider blanching.
Intended Use:
If you plan to use the okra primarily in stews or dishes where texture is less critical, freezing without blanching is perfectly acceptable.
