A Lightly Spiced Beetroot and Orange Chutney

This is a fast and simple chutney to make and best of all it does not need to mature - although the flavours do get a lot better with age!
LIGHTLY SPICED BEETROOT & ORANGE CHUTNEY
INGREDIENTS
1½kg raw beetroot - peeled and diced
3 oranges - zest and juice
3 eating apples - peeled and grated
3 onions – chopped
1 Chilli - (optional!)
2 TBSP white or yellow mustard seeds
1 TBSP coriander seeds
1 TBSP ground cloves
1 TBSP ground cinnamon
700g golden caster or granulated sugar
700ml red wine vinegar
METHOD
Mix together all the ingredients in a preserving pan or large saucepan.
Bring to a boil then gently simmer for 1–2 hours, stirring occasionally, until the chutney is thick and the beetroot is tender.
Once the chutney is ready, let it cool for 10 minutes, then spoon it into sterilised jars and seal while still hot.
Edible straight away but it will be even better, if you can resist it, after a month.
It will keep for up to 6 months in a cool dark place but once opened refrigerate and eat within 2 months.
