When cancelling Sephiroth’s neutral special in Super Smash Bros Ultimate, if you quickly tap and release your shield button this will result in the neutral special canceling without starting your shield animation. Chain any attack (immediately afterwards at the appropriate timing) to this quick shield press/release and you will cancel the neutral special into an instant grounded attack with no delay.
