Ingredients (Serves 4)
Chicken
• Chicken breasts – 2 large (about 600 g total), sliced horizontally into 4 thin cutlets
• Salt – ¾ tsp | 4 g
• Black pepper – ½ tsp | 2 g
• Plain flour – ½ UK cup | ½ US cup | 8 tbsp| 60 g
• Eggs – 2 large
• Olive oil – 2 tbsp | 30 ml
• Butter – 1 tbsp | 14 g
Lemon Sauce
• Garlic (minced) – 2 cloves | 2 tsp
• Dry white wine – ½ UK cup | ½ US cup | 8 tbsp | 120 ml
• Chicken stock – ¾ UK cup | ¾ US cup | 12 tbsp | 180 ml
• Lemon juice (fresh) – 3 tbsp | 45 ml
• Lemon zest – 1 tsp | 5 g
• Butter – 2 tbsp | 28 g
• Fresh parsley (chopped) – 2 tbsp | 10 g
• Optional: Capers – 1 tbsp | 15 g
