We are adding three classic Japanese blades to our offerings: the Gyuto, a long, thin multi-purpose Chef’s knife especially well suited for precision cuts, the Nakiri, a tall, rectangular blade that’s perfect for prepping fruit and vegetables, and the Santoku, a multipurpose knife for processing meat, fish, and vegetables. All three knives feature a blade crafted from 33 layers of Damascus steel with a VG-10 stainless steel core, which creates a unique tiger stripe pattern across each knife.
