For the dough:
To 2 cups maida, add 3 tbsp ghee, 2 tbsp oil, Salt, 1/2 tsp carom seeds (crushed) and 1/2 tsp kalonji. Mix well with hand as this helps making the dough flaky when fried. Now using water as required make a stiff dough. once the dough is ready, grease it a bit and Cover with damn cloth. Let it rest for 20-30 minutes.
For the filling:
• 1 cup dessicated coconut, roasted
• 2 1/2 tbsp jaggery powder
• 1 1/2 tsp jeera, roasted
• 1 tsp fennel seeds
• 2 tbsp sesame seeds, roasted
• 2 tbsp coriander seeds, roasted
• 1 tsp black pepper, roasted
• few curry leaves, dried and roasted
• 1-2 cardamom, roasted
• 1/3 tsp turmeric powder
• 1 1/2 tsp amchur powder
• pinch of hing
• 1 tbsp poppy seeds, roasted
• 1 tbsp red chilli powder
• 1/2 tsp salt (as of per taste)
Coarsely grind the above ingredients.
Method:
• Roll out the dough into a thin sheet. Cut the sides of the sheet such that you get a square or rectangle.
• Now apply ghee.
• Put generous amount of filling prepared throughout the sheet, except one side of the sheet. This to help seal it.
• Now started rolling the sheet inwards from one side. Roll tightly.
•Once you reach the other side of the sheet, apply some water and seal of the end.
• Roll it once again to ensure it is sealed well.
• Now cut the roll into small discs of approx 1-1.5 cm.
• Press the discs slightly.
• Start frying them on low flame only until they are golden brown or brown in color.
