First time making these, but I had to improvise because I couldn’t find any recipe on YouTube. Researched Japanese Soufflé Pancakes, and Banana Pancakes, and just combined the ingredients and processes. Determined to perfect this recipe! WHAT THE HACK!
Helpful to have:
Electric Mixer
Whisk
Sifter or large strainer
Spatulas
Pastry Bag (or Large Ziplock)
Large Pan with Lid
Ingredients:
3 eggs, separate yolks and whites (keep 2 yolks)
1-1/2 Tbsp Buttermilk (room temp or warm)
1/2 tsp Vanilla Extract
3-4 Tbsp VERY RIPE bananas (mashed, or almost puréed)
1/4 cup Flour
1/2 tsp Baking Powder
3 egg whites
2 Tbsp sugar (added incrementally)
1/4 tsp cream of tartar
Directions:
1) Preheat large pan on low heat while mixing batter
2) In a small/medium bowl, mix the 2 egg yolks
3) Combine buttermilk & vanilla, add to egg yolks and mix
4) Add mashed bananas, and mix with whisk
5) In a separate bowl, sift flour and baking powder & add to banana mixture, mixing thoroughly
6) The Meringue: In a separate bowl, add cream of tartar into the 3 egg whites, mix on medium/high speed, gradually adding sugar, whisking until stiff peaks are achieved.
7) Gently fold in 1/3 of the meringue into the banana mixture, combine
8) Fold in second 1/3 of the meringue, combine
9) Fold last 1/3 of the meringue, combine well
10) Add batter into the pastry bag (or ziplock with corner snipped off)
11) Grease pan with butter or vegetable oil
12) Pipe batter onto the hot pan on low heat, cover for 6 minutes; be sure to leave enough space in between cakes.
13) Carefully flip the pancakes, cover for another 6 minutes on low heat.
14) Sprinkle powdered sugar, cinnamon, top with carmelized bananas, honey, maple syrup, or whipped cream

**UPDATE**
This was fun to make, a bit time-consuming, but hey we have time right now. I would make the following notes:
1) Pancake has BARELY a hint of banana in taste with this measurement. If you want more banana flavor, try adding a 1/4 tsp of Banana Extract.
2) Pancakes deflated about nearly half in height after taking it out of the pan; try using 3-in round tin molds (or make your own 3-in rings out of foil, stapled secure, and butter the insides, making sure you fill up the rings to the brim with batter)
