Hello and welcome back to the fifth episode of Cooking with JamoahSpeaks. Today I chatted with my guest, Izabella Savich! Izabella is a college student in Michigan who struggles with Parosmia after her COVID-19 diagnosis. Bella explains how she developed Parosmia, how it affected her life and how a TikTok saved her.
In today’s dish we honor Izabella’s grandmother by using her recipe! This dish utilizes a medley of traditional Serbian spices to recreate a familiar home style fried chicken. This budget-friendly dish is sure to satisfy any cravings for a home cooked meal and is a great, familiar pick-me-up for anyone who misses the warm tastes of home.
Help us spread awareness of Parosmia by sharing this video to shine a light on those suffering with this ailment and donating whatever you can to abscent.org.
___________
Serbian Style Fried Chicken
Time ~40 minutes
Dish price range: $15-$25 USD
Calories: ~300 per serving
Ingredients:
Chicken, breast (as many as desired)
4 Eggs
Whole Milk, 2-4 cups
Flour, 1-3 cups
Breadcrumbs, Italian-seasoned 2 cups
Vegetable Oil
Vegeta (Serbian seasoning)
Meat tenderizer tool
Salt
Pepper
Instructions:
Start by tenderizing your clean chicken. Once the chicken breast has been flattened into the same thickness, trim any pieces that are too thin so they do not burn once fried. If desired, cut the chicken into strips for a more even cooking.
Next, season the chicken with salt, pepper, and vegeta seasoning to taste. Then place the seasoned chicken into a bath with 2-4 cups of whole milk and 2 tablespoons of olive oil. If soaking overnight, place the mixture into the fridge. The minimum soaking time for this dish is between 30 minutes and 1 hour.
After the mixture has soaked in the milk and olive oil bath, prepare a plate with 1 cup of all purpose flour and a medium sized bowl with 4 whisked eggs. Add ½ cup of milk to the whisked eggs.
In a separate bowl pour 1-1 ½ cups of the breadcrumbs. Then transfer the chicken from its milk bath to the flour and coat evenly. Once the flour lightly coats the chicken, dip the chicken into the egg mixture and transfer it to the breadcrumbs. Lightly coat each side. Continue this step for the remaining chicken.
Pour olive oil in a large, deep saucepan until there is roughly an inch in the pan (5-6 TBS of olive oil). Cook chicken on medium high heat for roughly 3-4 minutes on each side or until golden brown. Do not overcrowd the chicken or the cooking time will vary and the chicken will be oily. Once the chicken is cooked and its internal temperature is 165 F degrees, transfer it to a cool, dry area and let it rest for 10 minutes before eating.
Once the chicken has cooled, plate* your dish and garnish to taste.
Enjoy!
