What you should aim for is a 25 to 30 second extraction by pulling smoothly and consistently. Naturally, you need fine grounds suitable for espresso. One pull for a 2:1 ratio Italian-style espresso. Add a second pull for a 3:1 ratio Lungo style. Enjoy!
