Flaky and buttery crust Siew Pau / Baked BBQ Buns that's full of flavour & perfect for breakfast or afternoon treats.
Fillings:
250gm chicken meat/pork (diced)
1 tbsp Oil
2 cloves garlic (Chopped)
1 shallot (chopped)
2 Hoisin sauce (+/- own preferences)
1 tbsp oyster sauce
1 tbsp soy sauce
1/2 tbsp bean paste
2 tbsp sugar (+/- own preferences)
1 tsp dark soy sauce
1/2 tbsp Chinese Rose Wine
1/2 tsp sesame oil
Pepper & Red colouring
30g green pea
1.5 tbsp tapioca flour + some water (mixed well)
Water dough :
200gm All purpose flour
20gm Sugar
35gm Butter
15gm Shortening / Lard
90 ml Water (+/-)
1/2 tsp Baking Soda
1/4 tsp Salt
Oil dough :
100gm All purpose flour
55gm Butter
15gm Shortening / Lard
