Welcome to my kitchen, where we're making the most incredible Belgian yeast pancakes you've ever tasted! These aren't your typical Sunday morning flapjacks. The secret to their amazing flavour is a slow fermentation process, and a special ingredient that gives them an unforgettable, funky kick.
Ingredients:
250g all-purpose flour
5g salt
8-10g vanilla sugar
400g milk
5g dry yeast (or 15g fresh yeast)
50g butter
1 whole egg
2 egg yolks
125g Beer, sparkling water, or more milk to substitute
Instructions:
In a bowl, mix flour and salt.
Warm milk to 35-38°C and mix in vanilla sugar and yeast. Let it rest for 10 minutes until it becomes frothy.
Melt butter.
Pour the milk mixture into the flour and salt, whisking until a thick slurry forms to whisk out any clumbs.
Add the milk, one whole egg, and two egg yolks. Whisk until smooth.
Mix in the melted butter and beer (or substitute). Whisk again.
Let the batter ferment for 1 hour.
Beat the remaining egg whites until stiff and gently fold them into the batter.
Bake in a preheated pan with a small amount of butter.
Serve warm with your favorite toppings!
