RUSSIAN SPARTAK CAKE WITH SOUR CREAM & HONEY FROSTING is a complete slice of heaven!! This cake is a layered cake which is stacked with goodness of sour cream and honey mixture!! It is one of those bakes which should be done on days when you are in a mood for spending a lot of time in the kitchen and whipping up something elaborate and delicious!!! Yes, it takes tad bit more extra efforts and time but the result is so worth it!!!!
Ingredients:
2 large eggs
2 cups of sugar
Two thirds cup of milk (160 ml)
8 tablespoons unsalted butter
2 tsps baking soda
4 cups of flour to add to the mixture
2 cups of flour extra fir kneading the dough
3 cups of coarsely powdered graham crackers
For the frosting:
4 cups of sour cream
1 cup of honey
Method:
1. In a large bowl beat eggs with sugar with a electric whisk for good 10 minutes until the mixture is nice and foamy
2. Add butter and baking soda and mix for next couple of minutes
3. Bring water to boil in a pot
4. Place the egg/sugar mixture bowl on the pot. The bottom of the bowl should not touch the boiling water.
5. Keep whisking the mixture for 20 minutes until it is fully melted and acquires a very runny consistency.
6. Remove the bowl from the heat and IMMEDIATELY sift in four cups of flour in the mixture. DO NOT WAIT TO ADD THE FLOUR. Sift in the flour in batches and whisk to mix it well with the egg mixture. The mixture will slowly acquire a thicker dough like consistency. Let it remain until it turns lukewarm.
7. Add remaining two cups of flour and knead the dough by hand.
8. Dust some flour onto a flat surface/table. Place the dough on the surface and continue kneading till the dough is soft and firm
9. Shape the dough into a long loaf
10. Cut the loaf0 into 7 to 9 equal parts
11. Shape each part into a ball and roll it into 8-inch round. (This can be done by placing an 8-inch lid of a pot/ base of a foam pan etc. onto the rolled dough and then cutting along the side of the lid/pan as shown in the video)
12. Remove the extra scrap. All the extra scraps can be used to roll another round. Don’t waste those scraps 😊
13. Grease a big pizza baking pan or any other round baking pan you may have.
14. Bake each round separately at 350 F for 4 to 5 minutes (This part is a marathon. Unless you have nine ovens, you need to bake each round in the oven individually for 4 to 5 minutes. Bake one round, remove and then place another round in the oven to bake…keep going until all the rounds are baked) Remember, this cake is so worth it!!! You will know…you can do this!! 😊
15. Let the rounds cool down completely.
16. Prepare sour cream and honey frosting by mixing both these ingredients well.
17. Layer and stack the rounds with honey and sour cream mixture as shown in the video.
18. Once you have stacked the rounds, coat the outside of the stack evenly with the prepared frosting.
19. Coarsely powder graham crackers in a blender.
20. Coat the cake with powdered graham crackers
21. Top up the cake with a medley of fresh berries
