BRINJAL WITH SALTED FISH (咸鱼茄子)

We are not deep frying the brinjal and we are not using spicy tou ban jiang in this recipe.
This is 2 fresh chilli, 4 shallots and 2 garlic.
Grind these into a paste.
This is one small piece of salted fish cut into small pieces.
Cut 2 small brinjals into strips and put them in a bowl of water with 1 tsp of salt.
When we are ready to cook, rinse the brinjal, put them onto a plate and steam for 10 minutes.
The brinjal should be soft and tender like this after 10 minutes. Steam a while longer if they are still not soft.
Drain away the excess water.
We have to prepare the sauce in advance. In a bowl, add one tablespoon of oyster sauce, 1 teaspoon of dark soy sauce for colour, 3 spoons of water and 1 teaspoon of sugar.
We start by frying the salted fish.
When fragrant and a little brown add the chilli paste.
Fry for 2minutes.
After 2 minutes, add the sauce we prepared earlier.
Add more water and cook for 1 minute.
Add the brinjal and cook for another minute.
Add some water if it is too dry.
Add some corn starch to thicken the sauce and this is ready.
