Welcome to the first recipe in our Onam Sadhya series! Today, we're making Sarkkara Varatti, a traditional Kerala sweet banana chip that's crispy, caramelized, and packed with flavor. Perfect to kickstart your festive feast!

📝 Ingredients:
Raw Nendran bananas – 2 large
Jaggery – 200g (or adjust to taste)
Water – 1/4 cup (for melting jaggery)
Dry ginger powder (Chukku) – 1/2 tsp
Cumin powder (Jeerakam) – 1/4 tsp
Cardamom powder – 1/4 tsp
Black Pepper Powder -1/4 tsp
Fried Rice flour – 1/2 cup
Salt – a pinch

🔥 Method:

1.Peel & Slice Bananas:
Peel the raw Nendran bananas and cut them lengthwise. Then slice them into thick rectangular pieces.

2.Fry the Bananas:
Heat coconut oil in a deep pan. Once hot, fry the banana slices on medium heat until golden and crispy. Drain on paper towels and set aside.

3.Prepare the Jaggery Syrup:
In another pan, melt jaggery with 1/4 cup of water. Strain to remove impurities. Return to the pan and boil until it reaches a sticky one-string consistency.

4.Coat the Chips:
Lower the heat, add the fried banana chips to the jaggery syrup. Mix well so all pieces are evenly coated.

5.Add Spices:
Sprinkle dry ginger, cumin powder, cardamom, rice flour (optional), and a pinch of salt. Stir quickly to combine, then turn off the heat.

6.Cool & Store:
Spread the coated chips on a tray to cool completely. Once dry, store in an airtight container.
