►Serves 4 people
►Tarragon gravy
1 Stalk of celery (roughly chopped)
1 Carrot (roughly chopped)
1 Yellow onion (roughly chopped)
510g Turkey necks
1 Tsp Smoked paprika
3 Cups chicken stock
1 Sprig of tarragon
Olive oil
Salt & pepper (to taste)
►Slurry
2 Tsp Corn starch
2 Tsp cold water
►Stuffing
1/2 Medium yellow onion (roughly chopped)
1 Stalk of celery (roughly chopped)
1 Carrot (roughly chopped)
1 Large garlic clove (diced)
100g Mushrooms (sliced)
25g Pistachos
100g Spinach
1 Sprig of tarragon
200g Crusty bread (diced)
1 Egg
1 1/2 Cups chicken stock
olive oil
Salt & pepper (to taste)

230g Diced, peeled potatoes
